Spinach Cheese Chicken

Spinach Cheese Chicken  (serves 4)

  • 2 large boneless skinless chicken breasts, cut horizontally
  • 8 oz cream cheese, softened
  • 2 cup spinach, rinsed (I used a whole bag of spinach)
  • 1-2 tablespoons olive oil
  • 4 oz Mozzarella cheese, shredded
  • 1 bottle Italian Dressing
  1. Add chicken and Italian dressing in a Ziplok bag. Seal the bag and massage so the chicken is covered in the marinade, set aside for 10-15 minutes while you prep the remaining ingredients. Position a rack in the center of the oven and preheat the oven to 400ºF (200°C).
  2. Quickly wilt the spinach in a skillet with 1-2 tablespoon olive oil, set aside.
  3. Arrange chicken breasts drained from the marinade in a baking dish.
  4. Cut the brick of softened cream cheese in 4 equal parts and spread each part over each chicken piece
  5. Lay spinach on top of the cream cheese.
  6. Sprinkle mozzarella over the top.
  7. Bake for 20-30 minutes. Chicken is done when cooked through to an internal temperature of 165˚F (75°C).  Serve warm with a side of cauliflower rice, or baked veggies. Enjoy!

Keto Ice Cream

When you are following a keto lifestyle at times, your cravings for sweets are so strong, you cave. I figured out a Keto Ice Cream that is great tasting and spot on for watching carbs. It’s next to nothing carbs and high fat.  A perfect combo for ketogenic diets.

Simple three ingredient recipe.

Keto Ice Cream

(Makes 1 serving)

  • 2 Tablespoons of Splenda
  • 3/4 cup of heavy cream
  • just a smidgen of vanilla extract (see the amount shown in the picture below)
  • 1 – 7 oz. ramekin

Put the Splenda in the bottom of the ramekin.  Add heavy cream and the small amount of vanilla extract.  Stir until the Splenda is dissolved.

Place in the freezer until completely frozen.

When you’re ready to eat it, wait until it thaws a bit …

… but that’s like watching a pot to boil!

A much quicker method is to put it in the microwave for about 10-15 seconds. That’s just enough time to be able to put your spoon in and enjoy!

Keto Cheesecake | It’s That Good!

Wasn’t sure what to call this dessert but since it’s Keto acceptable we named it Keto Cheesecake.  Our good friend, Jo Ann Bashford, shared it with us and we are hooked!  We’ve made this dozens of times.  It’s quick to make and when you add berries and Reddi Wip … well … it’s simply delicious!

It’s certainly helps our sweet tooth after dinner!

Keto Cheesecake

INGREDIENTS:

  • 1 brick (8 oz.) of Philadelphia Cream Cheese
  • 1 cup of heavy cream
  • 1 cup of Splenda No Calorie Sweetener
  • Assorted berries
  • Reddi Wip

 

DIRECTIONS:

  1. In a medium to large bowl, heat the cream cheese in the microwave for 1 minute.
  2. Add Splenda and whip with electric beaters.
  3. In a 2nd bowl, use electric beaters and whip the heavy cream.
  4. Pour the whipped heavy cream into the cream cheese/Splenda bowl and mix with electric beaters until well blended.
  5. Pour into individual dishes (*) or a small pan and refrigerate for 2-3 hours or overnight.
  6. Right before serving, add berries and Reddi Wip.

* Makes enough to fill 4 individual ramekins

 

Cooking Keto Style is a craft in itself. I’m taking recipes and dishes I love and adapting them to low carbs/high fat.  Some work! Some don’t.  But my husband and I are living a keto lifestyle – this way of eating has improved our health, mood, strength, focus and much more.

Well, it worked!

Keto Cheese Chips

This Keto Cheese Chips recipe has to be one of the best and quickest ways to prepare a Keto style snack.

It literally takes less than 2 minutes to make and you’re ready to enjoy them with some salsa.

So I made these before we went to dinner at our favorite little Mexican restaurant the other night. Yep! I took these Keto Cheese Chips with me!

I put them in a little gift bag like I was bringing a present for someone! No one noticed I was using THESE chips instead of THEIR chips!

  • Cheese (I used Kraft Cubes Cheese Colby & Monterrey Jack) (Shredded Cheddar works great too!)
  • Parchment Paper
  • Microwave

These Keto Cheese Chips are so good! My grandson asks me all the time if I’d make some for him and, of course, I do!

Broccoli Cauliflower Salad

This Broccoli Cauliflower Salad only needs one substitute ingredient to make it keto-friendly and honestly …

… I can’t tell the difference. It tastes great!

So with merely <1 net carb it’s a perfect side dish to any meal.

My friend Sharon makes this recipe all the time and she shared it with us when we had Girls Week Out in Florida this past summer.

And here’s my adaptation of it below to make it okay to eat on our ketogenic plan.

Broccoli Cauliflower Salad

serves 4-6 or more!

Ingredients:

  • 1 head of cauliflower, chopped into bite sized pieces
  • 1 bunch of fresh broccoli, chopped into bite sized pieces
  • 1 red onion, finely chopped

Dressing:

  • 1/3 cup Parmesan cheese
  • 1/3 cup Splenda
  • 1 cup mayonnaise
  • 4-6 slices of bacon, cooked and crumbled

Directions:

  1. Mix vegetables in a large bowl.
  2. Pour in the dressing and mix.
  3. Chill until ready to eat.
